The Chemex Way

To achieve the perfect Chemex brew, here's what you do:

  1. Grind Size: Start with a medium-coarse grind, similar to the texture of sea salt. This allows for an even extraction and prevents the coffee from tasting over-extracted or bitter.
  2. Water Temperature: Bring fresh, filtered water to a temperature between 195°F and 205°F. This range ensures that the water is hot enough to extract the coffee's flavors without burning the grounds.
  3. Ratio: Use a ratio of 1:16 coffee to water. For example, if you're using 30 grams of coffee, you'll need 480 grams of water.
  4. Bloom: Begin by pouring a small amount of water over the coffee grounds, just enough to saturate them. This "blooming" process allows the coffee to release its CO2, resulting in a more even extraction.
  5. Pour-Over: Slowly pour the remaining water in a circular motion, starting from the center and working your way outward. Maintain a steady, gentle pour to ensure an even extraction.
  6. Brew Time: The total brew time should be between 3 to 4 minutes. If your brew is taking longer, try adjusting your grind size next time to a slightly coarser setting.

What it Should Taste Like

When done right, a Chemex-brewed coffee should have a clean, crisp flavor with notes of sweetness and a smooth, silky mouthfeel. The absence of sediment and bitterness allows the coffee's natural characteristics to shine. Depending on the origin and roast level of your beans, you may taste notes of fruit, chocolate, or even floral undertones.
